Easy Cheesecake Recipe (No Bake) 免烤芝士蛋糕食谱



Are you the one who love to make dessert but hate to bake it? Or are you have a party and you still do not know what dessert to prepare? This is a fuss-free, easy and quick cheesecake recipe that not requires any baking. You can just prepare the night before the party, pop it in the fridge and serve it when your guest is here. And also, who don’t love cheesecake.

明天假日呆在家里,可是又不知做些什么打发时间。喜欢吃甜食糕点,却又懒于准备和烘焙。十二月派对时段,要伤脑筋想出各式的甜食来让大家品尝,却无从下手。我们预备一份简单的食谱——免考芝士蛋糕,步骤与材料简单,你也和我们一起动动手吧。




免烤芝士蛋糕(材料)


Ingredient 材料

125 grams Crumble Digestive Biscuits - 125克消化饼干碎片
75 grams Melted Unsalted Butter - 75克新鲜黄油
300 grams Cream Cheese - 300克的奶油干酪
60 grams Icing Sugar - 60克糖粉(制甜食用的)
1 teaspoon Vanilla Extract - 一茶匙香草精
½ teaspoon Lemon Juice - 半茶匙柠檬汁
250 ml Thickened Cream - 250公升高奶油

Method 制作过程


BISCUIT BASE 饼底制作

  1. Place the biscuits into a zip lock bag and hit it using a rolling pin until beginning to turn to crumbs. Then add the melted butter and mixed it well with the crumbs.
  2. Press the mixture into a 20 cm / 8 inch spring-form tin; press a little up the sides to form a slight ridge. Then place it into refrigerator to let it set.
  1. 准备芝士蛋糕饼底。首先把消化饼干放入食品袋或者保鲜袋中捏碎,或者用擀面棍把它弄成饼干碎,然后加入切成小块状的新鲜黄油,充分搅拌均匀,形成干糊状。
  2. 把搅拌好的干糊状抹平铺在模具底部,压紧并让模具旁的干糊状微微翘起,然后放入冰箱让它凝固。


芝士蛋糕馅料

CHEESE CAKE FILLING 芝士蛋糕馅料制作
  1. Place the cream cheese, icing sugar, vanilla extract and lemon juice in a bowl. 
  2. Beat the mixture using stirrer until it become smooth.
  1. 在碗中混合搅拌奶油干酪、糖粉、香草精和柠檬汁。
  2. 转动搅拌器确保奶酪顺滑无颗粒。


芝士蛋糕馅料

    3.  Whip the thickened cream.
    4.  The creme is done when it form a soft peak.

   3.   接着把奶油达到打到发泡。
  4. 搅拌碗中的奶油会呈固体状。


芝士蛋糕馅

   5.   Pour the whipped creme into the creme cheese mixture.
   6.   Mixed both of the creme cheese mixture and whipped cream together. 
   7.   Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula or with a couple shake.
   8.   Put it in the fridge for 3 hours or overnight. Then your cheesecake is ready to be served.
   5. 把奶油倒入干酪糊中,并搅拌均匀。
   6. 饼底已经凝固变硬将上面准备的蛋糕糊倒入模具,用刮刀或者汤勺把表面抹平。
   7. 放入冰箱冷藏3个小时即可食用。
   8. 当你取出冷藏的芝士蛋糕,就可大展你的装饰功力。


Additional information
  1. For vegetarains make sure the cream cheese is a brand suitable for vegetarians. 
  2. Personally feel that it taste nicer if u put in fridge without covering after 2 or 3 days. It will be stiffer as the moisture has been evaporated in the fridge.
  3. You can add whatever jam of you choice on top. But we just like it without topping. 
  1. 如果有素食者享用此蛋糕,就得确保你所用的奶油干酪品牌是符合素食者口味的。
  2. 我们建议放入冰箱后两至三天才食用,芝士蛋糕的水份蒸发后,馅料比较扎实,口感较好。
  3. 在芝士蛋糕上层添加果酱会有不错的风味,当然我们还是觉得原汁原味的芝士口感最好。
